I'm currently in Acapulco eating a bowl of pozole.

Although I'm used to spelling it posole.

My Mom makes a mean bowl of posole and I was so happy to see it as a special on the menu today because it made me feel all warm inside.

Mom's has a little more kick to it and I prefer hers but this Mexican posole is pretty darn good!

It really hits the spot.

Also I want my parents to know they it was served with sliced onions, radishes, lettuce, tortilla chips and a bowl of limes.

Eating it made me think of home!
